Chocolate Marshmallow Fudge

The boys went out for the day so I took the opportunity to make this yummy fudge with MiMi, if we try to make it with them around then not much fudge makes it to the refrigerator! This is the easiest recipe I have but oh it is just sooooo good and it is always a winner with the kids when it comes to making it and eating it!

You will need : –

  • 450ml Condensed Milk
  • 2-3 cups Chocolate (try to combine two types for a more balanced taste)
  • pinch of salt
  • 2 tsps vanilla extract
  • 1-2 cups mini marshmallows (depending on how much your kids love marshmallows)

it’s that simple…but please remember to line your square tin with plenty of foil so that you can lift it out by the sides at the end.

For some reason not melting the chocolate over boiling water always seems wrong but you can just break up the chocolate (no need to cut it into shavings) and mix it straight into the condensed milk.

You need to cook this over a very low heat and stir, stir, stir (try to resist the temptation to speed this up)…

as soon as the chocolate is nearly all melted, take it off the heat and stir in the salt and vanilla extract, it should be lovely and glossy.

Then the fun starts, slowly start stirring the marshmallows in a little at a time and then the tricky part – try not to eat any before pouring it into a square tin and putting it into the refrigerator to set for a good few hours.
