Citrus Mint Fruit Salad with Lemon Cream

It is was time for a break from chocolate and a snack for homeschool! This is a refreshing fruit salad with a smooth zingy lemon cream. It will make plenty of fruit salad for a great brunch with friends…

for the fruit salad you will need : –

  • 4 cups strawberries
  • 2 cups blueberries
  • 2 cups blackberries
  • 4 oranges segmented
  • 1 cup water
  • 1 cup sugar (I use vanilla sugar that I have but plain sugar will still work for the base syrup)
  • 2 tbsp orange juice
  • 1 tbsp lemon juice
  • zest of 1 orange
  • zest of 1 lemon
  • couple of sprigs of mint

for the cream you will need : –

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 2 tbsp lemon curd
  • 1 tsp vanilla extract

To get started you will need to grab a pan and pour in your water and sugar. I always keep my used vanilla pods in a pot of sugar and believe me this makes such a difference to the sugar even if you are just looking to sprinkle it onto strawberries on their own. The smell is divine…

Next you add the orange juice, lemon juice and zest of both the orange and lemon, beautiful citrus smells should be filling your kitchen! Now comes the mint just immerse a couple of springs of mint into the the pot. Turn the heat on and simmer for 10 minutes.

Now just take it off the heat to cool and remove the mint springs once the syrup has cooled so that it can really mingle with the citrus. Then all you have to do is pour just enough of the liquid to cover the prepared fruit, stop at the point that you have just coated the fruit, no swimming pool needed here!

If you are going to change the fruit try to avoid mixing in banana in as it can go mushy. If you have anyone that loves banana then just pop those straight into their dish first before you plate up the fruit salad on top.

Now whilst the cooling is happening you can sit back as the cream will only take a few minutes!

Just a few ingredients make for a silky smooth, decadent cream, just combine the heavy cream, powdered sugar, vanilla extract and lemon curd…

and whisk until it you get to the soft peaks stage. This is the part where a mixer really comes into its own, otherwise a hand mixer will do just fine.
