Blueberry and Raspberry Sauce

The kids…okay and mommy, absolutely love ice cream and this topping is another great way to have some fruit and makes any ice cream special in no time at all. After all we all need little treats…

You will need: –

  • 1 cup blueberries
  • 1/4 cup maple syrup
  • 1 tsp lemon juice (freshly squeezed)
  • zest of 1 lemon
  • 1 tsp vanilla extract
  • 1/2 cup raspberries

First you need to combine the blueberries and maple syrup in a pan, this should make them really glisten…looking good already…

next add the lemon juice, lemon zest and vanilla extract. Everything tastes and smells great with vanilla…

now gently stir for about 5 minutes…

it should be looking lovely and thick and you should still be able to make out the berries. Next leave it to cool down and whilst it is just warm stir in the raspberries.

Now for the official taste test…my kids love this poured over vanilla ice cream whilst it still a little warm…looks like a keeper!
