No bake, five minutes to prepare and popular with little and big kids…these are great for kids snacks, they travel well and are truly versatile. With no slicing, dicing or baking involved these are also a great recipe to make with the kids…
You will need:
- 1 stick butter
- 1 pack of marshmallows (10 oz)
- 2.5 cup crisped rice
- 2.5 cup traditional oats
- 3/4 cup shredded coconut
- 1.5 cup chocolate chips
- 2 tsp vanilla extract
- 1/2 tsp salt
First you need to line a square tin with plastic wrap leaving some overhanging the tin to make it easy to lift them out once they have chilled.
Now, in a large bowl it is time to combine the crisped rice, oats, coconut and salt and set aside.
Next, melt the butter over a gentle heat, once melted add in the marshmallows…this has to be when the kids are not around in our home as the bowl of marshmallows would quickly disappear! Still over the gentle heat, melt the marshmallows and mix with the butter. Once it is velvety smooth mix in the vanilla extract…yum!
Allow the mixture to slightly cool and combine the dried ingredients and the luscious marshmallow.
Next add in 1 cup of the chocolate chips reserving the final 1/2 cup for the topping.
Then it is time to transfer the mixture into the square tin and press the mixture firmly down into the tin. Immediately gently press in the final 1/2 cup of chocolate chip and transfer the tin straight into the refrigerator.
Leave the tin in the refrigerator for at least 2 hours. Finally remove the plastic wrap and cut into squares for all to enjoy….x♥x
